Rewena Bread

Rewena bread is a traditional Māuikura sourdough bread, made using a fermented potato starter.  

Instructions

 
  1. Make the starter: Boil the potatoes until soft, then mash them with a little of the cooking water. Add the sugar and mix well. Let the mixture cool to lukewarm, then cover and leave in a warm place to ferment overnight.
  2. Prepare the dough: In a large bowl, mix the flour and salt. Make a well in the center and add the rewena (potato starter). Gradually mix in warm water to form a soft dough.
  3. Knead: Knead the dough on a floured surface for 10 minutes, until smooth and elastic.
  4. Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  5. Bake: Preheat the oven to 180°C (350°F). Shape the dough into a loaf and place it in a greased loaf tin. Bake for 45-60 minutes, or until the bread sounds hollow when tapped.
  6. Serve: Let cool slightly before slicing and serving with butter.
