Kūmara and Watercress Salad

This salad combines two traditional ingredients, kūmara (sweet potatoes) and watercress, in a simple yet flavorful dish.  

Instructions

  1. Cook the kūmara: Boil or steam the kūmara until tender, about 10-15 minutes. Drain and let cool.
  2. Mix the salad: In a large bowl, combine the cooled kūmara, watercress, and red onion.
  3. Dress the salad: Drizzle with olive oil and apple cider vinegar. Season with salt and pepper. Toss gently to combine.
  4. Serve: Serve the salad chilled or at room temperature.
