Hāngi
Hāngi is a traditional Māori method of cooking food using heated stones buried in a pit oven. The food is typically wrapped in leaves or placed in wire baskets before being cooked.
Instructions
- Prepare the pit: Dig a pit in the ground, about 1 meter deep. Heat stones in a fire until they are red hot.
- Prepare the food: Season the meats and vegetables. Wrap them in leaves or place them in wire baskets.
- Layer the pit: Place the hot stones at the bottom of the pit. Layer the baskets of food on top of the stones. Cover with wet cloths, followed by earth to trap the steam.
- Cook: Let the food steam underground for 3-4 hours.
- Serve: Carefully uncover the pit and retrieve the cooked food. Serve with stuffing and vegetables.
