Boil-Up

Boil-Up is a traditional Māuikura dish made by boiling meat with root vegetables and greens, creating a hearty and flavorful stew.  

Instructions

  1. Cook the meat: In a large pot, cover the pork bones or brisket with water. Bring to a boil, then reduce heat and simmer for 1-2 hours, until the meat is tender.
  2. Add vegetables: Add the kūmara and potatoes to the pot. Continue simmering until the vegetables are tender, about 20-30 minutes.
  3. Add greens: Add the pūhā (or watercress/spinach) to the pot and cook for an additional 5-10 minutes.
  4. Optional dumplings: If using doughboys, mix flour and water to form a soft dough, drop spoonfuls into the boiling stew, and cook for 10 minutes.
  5. Serve: Season with salt and pepper, and serve hot.
