Shapeshifter
Less a specific species and more a general category of species, shapeshifters are creatures capable of changing their forms. Usually shapeshifters are able to do so voluntarily, but some, like lycanthropes, often find their transformations subject to forces outside of their control such as the phases of one or more of the moons. There are three categories of shapeshifter: full shapeshifters, restricted shapeshifters, and limited shapeshifters.
Full shapeshifters are capable of transforming into an individual of a separate species with no tells or complications. For instance, dragons are capable of turning into a perfect copy of a human, to the point that they can even interbreed with them despite their natural form being that of a reptile. Angels also fall into this category, and are capable of shifting their form to suit their preferences to the point of often taking on forms that other species find unsettling or confusing.
Restricted shapeshifters can take on any form, but with some sort of limitation or tell. For instance, a motte can take on any form they please, with the caveat that said form will sport their telltale wings. Meanwhile, when tengu assume another form, they will retain either their wings, heads, or beaks. Especially young or inexperienced tengu often retain all three.
Limited shapeshifters can typically only take on one, maybe two other distinct forms. For instance, selkies can only shift between their natural seal form and a humanlike form, while nagas can only shift between their normal multi-armed reptilian form, and a full snake form.
