Gray Fruit Ale

A dark amber fruit ale that is described as a sour fruit ale with an aftertaste of honey and a sweet finish.   The ale has a small white head that dissipates quickly to a ring and covering, still leaving some lacing.  The aroma, while slightly sour, is a strong burst of ripe raspberries.

Manufacturing process

The grains need to boil for 60 minutes.  The raspberry puree is added after the primary fermentation has begun to tail off.  Dried raspberries are also added because the naturally occuring sulfite helps retain the sweetness.

History

The recipe is old - probably older than the nation of Opelaion. There are actually a few variation that have developed over the years. This particular variation claims to be the first. Although those who make the all wheat variation claim the same. Depending upon the location there are variation that pair the raspberry with basil, cinnamon, and even chocolate, though that particular variation is rare and found only in and around the tropical portions of Opelaion.

This ale is found in Opelaion, particularly around Eremiaantelios.

Raw materials & Components
A mix of wheat, oat, and rice is used to create this ale.  In addition a raspberry puree paired with ginger is added.  This gives the ale it's redder color and tarter taste.
Tools
  • A grain mill for crushing the grains.
  • A mash tun, a metal vessel equipped with a filter and spigot, is used to mix and heat the grains and water to produce wort.
  • A hot water pot for heating the water to mash temperature.
  • A brew kettle for boiling up wort which has been mixed with hops.
