Salmon Croqutte


A Rito dish that combines freshly caught hearty salmon and bread crumbs for an easy and savory appetizer.

Ingredients

 
1 1/2 pound of chopped salmon filet, skin removed   1/2 cup of onions, minced   1/4 cup of celery, minced   1 egg   2/3 cup of breadcrumbs, divided   1 tsp of spicy pepper, minced   2 cloves of garlic, minced
1/2 tsp of ground Hylian herb   1 tsp of cane sugar   1 tablespoon of soy sauce   rock salt   ground black pepper   palm fruit oil, for sauteing   palm leaf oil, for frying
 

Directions

  1) Heat palm fruit oil in a skillet, then saute the onion, celery, and pepper until soft. Allow to cool until room temperature.   2) In a bowl, beat the egg, then add all ingredients, plus 1/2 a cup of the breadcrumbs. Mix well.   3) Heat the palm leaf oil until popping.   4) Shape the mixture into patties (should make about 8), then coat the patties in the leftover breadcrumbs.   5) Fry the patties on both sides until golden brown and cooked all the way through. Serve with a side of spicy egg sauce.

8 servings
To make into a meal, serve with rice and steamed vegetables with butter.   Can also be made with flour instead of breadcrumbs.
