Fish In Flatbread
The Fish in Flatbread is a stuffed sea bass encased with a nice crispy sheets of flatbread which protected the soft, cooked delicous fillet, in a shape of fish. It is a seasonal special meal done by Quarryman's Pub, only available during the Millet Festival.
SInce it's hard to make, this old family recipe is quite expensive and luxury. A single dish alone can cost a Sart or 320 Kolun. It can be served with any beverage, which cost seperately.

Preparation
Stuffing
- Mince onions and garlics. Chop leeks and lettuces.
- In a pan on medium heat, combine the olive oil with all these vegetables. Season with salt and pepper.
- Cook until all vegetable tender.
- Put out of the heat to cool down, then add crumbled cheese.
- Mix together until smooth.
Flatbread
- Combine flour, a pinch of salt, melted lard, and warm water.
- Knead the dough until smooth, rest for about 20 minutes.
- Roll thinly into a sheet.
Sauce
- Add minced onions, parsleys, and garlics into a pan on low heat, with a little but of olive oil.
- Cook until all soften.
Assemble
- Cut the bass to remove the spine, leaving only fillets, ahead, and a tail. Season fillets with salt and pepper.
- Add your stuffing between the fillets.
- Put our fish on rolled flatbread sheet. Brush an egg wash around it before encasing it with another sheet.
- Cut into the shape of fish, draw the scale, and decorate the eye and/or lip with scrap sheet, before brushing all over with egg wash.
- Put on earthernware plate. Bake for around 15 minutes or until the skin turn to golden brown.

The name made me chuckle, but it's actually pretty good. Even a recipe with it. Now I wanna do one in real life and eat it, just to see how it tastes.
