Accordion Potatoes

Ingredients
- 3-4 large potatoes
- Animal fat
- Herbs, recommendations include wild garlic, rosemary, and wild peppergrass

- Spoon to drizzle butter over the potatoes
Steps
- Wash dirt off potatoes then cut down into rectangles. They'll be about a half knuckle thick and a finger long. Save the extra the potato scraps for stew.
- Next, going diagonally make cuts into the potato rectangles about half way through, then flip the rectangle over and do the same thing but with the cuts slightly offset so it's not cut all the way through. This gives them a stretchy quality that they get their name from.
- After that, melt the butter and lightly coat the accordion potatoes in it. The butter should get into the cuts you made previously filling it with more flavor.
- Then sprinkle whatever herbs you're using on the accordion potatoes. A pinch of each herb per potato is usually good. Some people don't like seasoning, but they're wrong and you should absolutely season them well. Personal preference on seasoning varies, feel free to experiment.
- Finally, heat the animal fat on a pan until it's melted and put the potatoes on, after about a minute on each side they should be ready. The timing can vary a little but you want them to be golden and crispy on each side, don't under or over cook the potatoes.
