Occasio

Occasio is a sauce made by first extracting the bone marrow from animals, cows are the most commonly used due to the number of cows but also the amount if marrow one can get from the bones. It is then placed in barrels and mixed in with salt, maybe some spice if the maker has access to it, it is then left to be seasoned in the sun and is frequently turned, typically by kids, after they have been allowed to season in the sun for some time, the resulting liquid, the Occasio, is then taken from the barrels. The paste that is left over from this production is called airum and is used to salt and flavour other types of food.   Occasio is produced and consumed all over the Dercian Empire and is consumed by all social classes.   If a city or town had a production of Occasio, it is believed to be a prosperous site, and sites are producing this product all over the southern coast of Dercia.   Occasio can be used as a sauce for dipping once food into, but its likewise possible to use it to give some extra taste to stew or other boiled dishes, like boiled veal or steamed mussels.   Occasio was originally introduced to the dinner tables of Pearlhal and the Crienia people around the time the Ancient Empire conquered the region sometime before 50 B.I.C and it quicky became a must have for the people of Pearlhal, some scholars have even jokingly said that the First unification war was started because of the Crienia peoples craze for the product.

Sounds like it would be quite a rich, heavy sauce. There is no danger from the raw bone marrow?

From a real world health point of view: No idea, although I suspect that the salt will limit the danger :)   From a in-world perspective: its perfectly fine
