First, sheep milk curd is mixed with sea salt, pepper, and cinnamon. The dough is cut into squares, and one diagonal half of each square is covered with one layer of the seasoned curd and one of fish eggs. Duck eggs are separated into yolk and white, and the latter is put onto the edges of those squares before they are folded. After pressing the outer edges together, the tops of the pastry pieces are covered in yolk, and chopped walnuts are sprinkled onto them.Variations
