Brewing
The process of adding water to something rich in sugary carbohydrates and letting them ferment. The yeast breaks down the sugars into ethanol and other compounds that make for a, hopefully, well-tasting alcoholic beverage. Brewing as a craft predates the Dawn War and the alcohol helped clean water that might otherwise be infected by some stray bug.
These days, all cultures have their own brewing traditions. Everything from ale to mead to syrups. Technically, making wine is brewing, though it's framed as its own thing. Harder spirits are made by brewing a starting point and then distilling the result to get rid of unwanted flavours and increase the alcoholic potency.
