Sand Cake

This small, crumbly-looking sweet cake is mostly made during sacred days, when the nomads have settled temporarily near an oasis.

Manufacturing process

Made with a combination of milled wheat, eggs, camel/goat milk, butter, and a pinch of salt, this mixture is made sweet by the addition of honey gathered from the local wild hives.

The combined ingredients are pressed into a greased iron pan and left to proof beneath a cloth, before the pan is covered and the cake is baked over a fire pit.

It’s typically garnished with dates or nuts. It is considered proper to wait at least an hour after the cake has been baked before serving it.
