Mallow Leaf Stew
This stew is a commonplace dish found in many households throughout southern Stamekia. It is made by by cooking a large amount of mallow leaves, a hardy leafy plant with a distinctively bitter flavour that grows well in the rooftop gardens that many stamekians cultivate.
The leaves are prepared by removing the stem and finely chopping the remainder. They are then mixed with sautéed garlic and coriander and boiled in a broth. This is typically a fish broth, although there are variants nearer the Niholia and Udynea border that use chicken. The meat is also shredded and placed back in with the leaves.
Once the stew has achieved thick, slimy and slightly glue-like texture, it is served with flat bread and rice. The dish has a distinctively bitter flavour.
