Hupa

Given that many Talfaltaners spend their whole lives, from birth to death, sailing on the open water, their cuisine is very much derived from what the sea provides.

This particular dish is one of a handful where the flesh isn’t eaten raw, but instead is cooked in a milky broth made from boiling fish bones.

Manufacturing process

The main ingredient is, of course, fish and Talfaltaners aren’t too select on the type as they believe freshness matters more. The fish is deboned and those bones are thrown into a rubbing mixture made from ginger and other traded spices that vary from one city ship to another.

The bones are then cooked until brown before seawater and fish flesh is added. Everything is allowed to simmer until the liquid turns white, the mixture then is strained and served. Overall, the taste is a blend of sweet and savoury.
