Bean Stew

This bean stew is often consumed as the morning meal during Stamekia’s dry season due to its main ingredient being dried beans that, like most large crops, are harvested during the land’s fertile period.

Manufacturing process

The dried beans are first soaked overnight, before being boiled for roughly an hour. They are then introduced to a pot of water that also contains garlic and onions that have been finely diced and sautéed in a blend of spices and herbs (the type unique to each family).

Whilst some merely leave the mixture to simmer and thicken, the beans are typically roughly mashed. This step is wholly dependent on the individual and some choose not to break up the beans. It is generally served with warm flat bread and fresh greens as a topping. The dish is hearty, warming and the beans have a creamy texture.
