Apple Squares

Cezhory boasts a great expanse of apple orchards, so it’s not surprising that they make use of that fact in their desserts.

The dough is made much the same as many other crumbly pie bases, with the addition of honey and yoghurt. This dough is divided in half and one part is placed in an oven to cook whilst the filling is prepared.

For that filling, the consensus amongst Cezhorians is that the apples must be tart to make a perfect square. They are roughly diced, then fried with a mixture of honey and sweet spices.

Immediately after this is done, the baked dough is removed from the oven and the filling smeared over the cooked bottom half. The second part of the dough is added and the whole dish returns to the oven until the top gains a baked crust.

It is left to cool before being cut.
