Nemos cooks with passion and provocation. His flavors are bold—sour with sweet, hot with cool—and his plating is part sculpture, part riddle. He loves surprising the palate and challenging the eater. His personal favorite: a dish of blackened root crisps that crackle with a dusting of fermented citrus ash. His kitchen is chaotic but never careless.
