Manufacturing process
Starts with mild goat's cheese, partially dehydrated and pressed flat, before being left to ferment in a bucket for 5 weeks, or until substantial mold has grown on the surface. The mold is scraped off, and the cheese is stuffed into a stone dish and heated over a fire until it becomes a thick paste. A blessing is said over the paste, and then it is eaten by hand.
