Lardo Cheese, contrary to popular belief, is not made from lard at all. Rather, it is a kind of cheese made from aging butter. As one may expect, it is the unhealthiest and most caloric cheese in all of Altairus. Despite this, it has its fans.

History

Lardo Cheese originally comes from the Ewe's Milk Meadows in Avalon. It was created on accident when some ewe's milk butter was stored improperly and fermented inside a damp, musty barn. Upon tasting it, the negligent farmer found it to be absolutely delicious. To this day, Lardo Cheese is produced exclusively in the Ewe's Milk Meadows, as the autumnal climate provides ideal conditions for the cheese to develop its distinct flavor profile.

Lardo Cheese became popular throughout Avalon for another reason, too; it was highly caloric. In the face of a life of hard work and strife, Lardo Cheese provided those of the continent with enough energy to make it through the day on minimal food. The name "Lardo Cheese" came from the fact that the cheese resembled lumps of unrendered lard.

Today, you can find Lardo Cheese in some markets in Altairus, brought by traveling merchants who went to Avalon. It is good as an occasional treat, but be careful; the calories add up quick!

Flavor

Lardo Cheese has a very strong aroma. It has been described as that of a sizzling burger on the grill or fried chicken fingers.

As one might expect, Lardo Cheese has a strong, rich, buttery flavor, with notes of beef, potato, and chicken. Sometimes, it is garnished with cinnamon, nutmeg, and other spices of Avalon. These give it a slightly sweet flavor.
